Die Gurkenst\u00fccke mit etwas Salz bestreuen und circa zehn Minuten einziehen lassen. Danach vorsichtig das Wasser aus den eingesalzenen Scheiben pressen und mit allen \u00fcbrigen Zutaten marinieren. Zum Schluss mit frisch geriebenem Ingwer und Salz abschmecken.<\/p>\n<p><strong>Soja-Zwiebel-Marinade:<\/strong><\/p>\n<p>1 Zwiebel, in feinen W\u00fcrfeln, 50 ml Sojaso\u00dfe, 20 ml Reisessig, 1 Essl\u00f6ffel Wasser, 40 ml Raps\u00f6l,<\/p>\n<p>schwarzer Pfeffer.<\/p>\n<p>Die Zwiebel w\u00fcrfeln und mehrmals in kaltem Wasser sp\u00fclen, danach abseihen und vorsichtig ausdr\u00fccken. Nun alle Zutaten mit den Zwiebeln vermischen und mit frisch gemahlenem schwarzen Pfeffer abschmecken.<\/p>\n<p><strong>Finish:<\/strong><\/p>\n<p>18 St\u00fcck Edamamekerne <em>( unreif geerntete Sojabohnen),<\/em><\/p>\n<p>gehackter Sushi-Ingwer gemischte Shiso-Kresse Sojaso\u00dfe<\/p>\n<p>Zwei Essl\u00f6ffel der Soja-Zwiebel-Marinade in die Mitte eines tiefen Tellers geben und daneben etwas Shiso-Gurkensalat anrichten. Je sechs Scheiben Thunfisch auf die\u00a0 Marinade\u00a0 legen.\u00a0 Abwechselnd\u00a0 Edamame\u00a0 und\u00a0 gehackten\u00a0 Ingwer\u00a0 auf\u00a0 dem Sashimi verteilen und mit etwas Sojaso\u00dfe betr\u00e4ufeln.
